Ingredients

2 cups raw Lowell
Farms Jasmine Rice
(White)

3 Tbl. butter

1/2 cup green onions

1/4 cup sliced almonds

2 cans chicken broth

1/2 tsp. pepper

2 pkgs. frozen chopped
spinach
-
1/2 tsp. salt
-
2 cups shredded cheese
(your favorite type)

1/2 cup chopped pimento
Directions
Cook onions and rice in butter. Add broth, salt, and
pepper. Bring to boil and simmer covered for 15 minutes.
Add spinach and simmer for 10 minutes. Breaking up
spinach, add cheese and pimento. Garnish with toasted
almonds.
Serves 6-8
