B.J.'s Green Rice

Ingredients

  • 1 cup uncooked Lowell Farms Jasmine Rice (White)
  • 1 bunch green onions, chopped
  • 1/2 bell pepper, chopped
  • 2 tblsp. butter
  • 1 1/2 cups water
  • 2 tsp. chicken concentrate
  • dash white pepper
Directions

Saute green onions and bell pepper in butter in a heavy 3 quart pot. Add Jasmine Rice, water, and seasonings, stir. Bring to a boil, cover, and cook 15 minutes. Turn off burner and let steam while you are preparing the rest of your meal. Do not lift the lid until ready to serve. Toss with a fork.

Variation: Add 1 tsp. curry powder and 1/3 cup raisins before cooking.
