Ingredients

1 cup raw Lowell Farms
Brown Jasmine Rice

1/2 cup raw wild rice, cooked

1 bunch green onions,
chopped

1 cup mushrooms, sliced

2 Tbl. balsamic vinegar
-
2 Tbl. olive oil
-
1 24 oz. jar artichoke
hearts, drain & save juice

1 can mandarin oranges,
drain & save juice
-
1/2 can cream of chicken
soup
-
1/2 cup bread crumbs
-
orange juice
-
salt and pepper to taste
-
juice of one lemon
Directions
Sauté onion and mushroom in olive oil. Add Balsamic Vinegar.
Drain Artichoke Hearts and Mandarin Oranges. Save liquids.
Add orange juice to liquids to make 2 cups. In a heavy
saucepan combine: liquids, 1/2 can Cream of Chicken Soup,
sautéed vegetables, raw Brown Jasmine Rice, cooked Wild
Rice, salt & peppers. Cook for 30 or until rice is done.
Pour into a bowl and gently fold in Artichoke Hearts, Mandarin
Oranges, and lemon juice.
Place into greased 9x13 pan and top with bread crumbs. Cook in
350 degree oven for 20 minutes until warm and the top is crispy.
Makes 6-8 servings.
