Eleanor's Broccoli-Rice Casserole

Ingredients
 
  • 1-3/4 cups raw Lowell Farms Jasmine Rice (white)

  • 3/4 cup chopped onion

  • 3/4 cup chopped green pepper

  • 1 cup chopped celery

  • 4 Tbl. butter or oleo

  • 1/2 10 oz. pkgs chopped frozen broccoli

  • 1 8 oz. Cheese Whiz

  • 2 cans cream of chicken soup

Directions

Cook rice. Sauté onions, green pepper and celery in butter. Cook broccoli, drain and combine with Cheese Whiz, sautéed vegetables, and undiluted soup. Fold into cooked rice and turn into 3 qt. buttered casserole. Bake in 350 deg. Oven until hot and bubbly for about 20-30 minutes.

Makes 6-8 servings.
