Ingredients
- 2 cups raw Lowell
Farms Jasmine Rice (white), cooked
- 2 eggs
- 1/2 cup grated Parmesan
Cheese
- 1 Tbl. Chopped Parsley
- 2 Lbs. Ground Beef
- 2 Tbl. Olive Oil
- 1 Large Onion, chopped
- 1 Small can tomato
paste
- salt & pepper to taste
- 5 oz. frozen peas
- 1 cup Breadcrumbs
- Oil
Directions
Mix cooked rice, eggs,
parmesan, & parsley. Set aside. Sauté ground beef with olive oil
and chopped onion. Add tomato paste and salt & pepper. Stir in frozen
peas. Chill.
Place 1/4 cup rice mixture
in palm of hand. Place 1 Tbl. meat mixture and cover with 1/4 cup
of rice mixture. Shape into ball. Roll in breadcrumbs. Deep fry
in oil until golden .
Makes 12 rice balls.
