Ingredients
- 1 cup chopped onions
- 1 cup sliced celery
- 1 cup sliced carrots
- 1/4 cup chopped fresh
parsley
- 1/2 tsp. black pepper
- 1/2 tsp. thyme
- 1/2 tsp. basil
- 1 bay leaf
- 3 quarts chicken
broth (I make this with water & concentrated chicken soup base)
- 1 cup uncooked Lowell
Farms Jasmine Rice (White)
- 3/4 pounds raw chicken
, cut in cubes
- 2 tblsp. fresh lime
juice
Directions
Combine onions, celery,
carrots, parsley, pepper, thyme, basil, bay leaf and chicken broth
in dutch oven. Bring to a boil; stir once or twice. Simmer uncovered
20 minutes. Add chicken cubes & Jasmine Rice and simmer 10 minutes
or until cooked. Remove bay leaf. Stir in lime juice just before
serving.
Makes 8-10 servings.
