Ingredients
- 1 cup raw Lowell
Farms Jasmine Rice (white), cooked
- 1/2 cup Red Bell Pepper,
finely chopped
- 1/2 cup Green Bell
Pepper, finely chopped
- 1/2 cup Cucumber,
peeled and finely chopped
- 1/3 cup Red Onion,
finely chopped
- 1/4 cup Cilantro,
chopped
- 1 11oz can Mandarin
Oranges, drained
Dressing:
- 1/4 cup Oil
- 2 Tbl. Tarragon Vinegar
- 1 Tbl. Sugar
- 2 Tbl. Lime Juice
- 1/2 tsp. dry mustard
- 1 pod garlic, minced
- 1 tsp. Fresh Ginger,
minced
Directions
Pour dressing over cooked
and cooled rice and toss well with fork. Add chopped vegetables
and toss again. Add oranges last and toss gently of as not to break
the sections.
Serves 6 people.
