Aunt Laura's Fried Rice

Ingredients
 
  • 1 cup diced cooked shrimp, chicken, ham, or pork

  • 1 can (3 g.) sliced mushrooms, drained

  • 1 can bean sprouts

  • 1 green onion, chopped

  • 1/2 bell pepper, chopped

  • 2 Tbl. soy sauce

  • 3 cups day old cooked Lowell Farms Jasmine Rice (white)

  • 1 egg, well beaten and scrambled

  • salt & pepper

  • oil

 

Directions

Cut meat in thin strips and lightly brown in hot oil. Add mushrooms, bean sprouts, onion, green pepper, soy sauce, and cook for 5 minutes. Add rice and continue to cook over low heat for 10 minutes, stirring frequently. Add salt and pepper and beaten eggs and cook for 5
minutes or until fluffy. Add soy sauce if desired.

Serves 8-10
