Amish Rice Pudding

Ingredients
  • 1 cup raw Lowell Farms Jasmine Rice (White)

  • 2 cups water

  • 3/4 cup sugar

  • 1/4 cup raisins (optional)

  • 2 Tbl. rum or rum extract

  • 3 cups milk

  • 1 lg. cinnamon stick

  • orange peel, optional

Directions

Using a diffuser on the burner, heat milk and cinnamon
stick in saucepan over medium heat for 15 minutes. Set
aside.

In a 3 qt. Saucepan, combine rice, water, and salt and
bring to a boil. Stir once or twice. Place orange peel on
top (optional). Lower heat and cover. Simmer about 15
minutes until water is absorbed.

Toss out orange peel. Strain milk and stir into the cooked
rice. Add the sugar. Summer about 20 minutes until
thickened, stirring often. Add raisins and rum and stir.
Simmer no more than 10 more minutes.
Serve with whipped cream or cool whip.
